Only 6 hours , 30+ minutes to go…before I will be reunited with wheat. Unfortunately, it won’t be kosher to break the fast for dinner until after choir practice tonight. Crap. (Then again, the goodies usually offered at break time are good!)
Anyway, I saved the best gluten-free lunch for last: The Khao Mai Gai, or Thai chicken with rice: simmered chicken with jasmine rice and its clear broth, scallions, cucumbers, cilantro, and a tamarind-based sauce with 4 points of Thai seasonings: salty, sweet, sour and spicy.
The line was huge outside the Khao Man Gai NY, and it’s a little expensive ($10), but it’s worth it occasionally.
This week has been long and difficult. It has taught not to take anything for granted, whether it’s food, relationships, and situations. But sometimes, spices will work in your favor (and flavor) 🙂
